I figured out this easy way to make a backup over ssh.
ssh remoteserver "cd source/dir && tar -vzcf - ." > yourbackup.tgz
You can also do this (not sure if it really makes a difference)
tar -vzcf - . | ssh remoteserver "cat > yourbackup.tgz"
